Shiraz 69%, Mourvèdre 14%, Cinsault 14%, Grenache Noir 3%.
The wine is medium bodied with a lingering finish. It has aromas of violets and raspberries with a hint of spice.
Fillet steak with a creamy sauce, prime rib roast.
Harvesting & Fermentation:
All the grapes were picked at optimal ripeness from specific blocks in Franschhoek and Paarl.
All the grapes were de-stemmed and then transferred to open top fermenters as whole berries. 10% of the Shiraz grapes were fermented as whole bunches to add more structure to the final blend. The wines were fermented separately in open top fermenters with daily punch downs. Thereafter the separate varieties were matured in French oak barrels for 12 months before blending.
